This is a ‘no oven’ cake which used to be a favorite tea time snack at tea stalls of Kerala. I have seen this in my childhood days , in the big glass almirahs of the tea stalls and continues to retain its place in villages. The ingredients used are easily available in everyone's kitchen. Whenever I make this vettu cake( in Malayalam, vettu means split), it will be over in no time.
Ingredients
1. All purpose flour (maida) – 1 cup (250 ml cup)
2. Semolina (Rawa/suji) – 1Tbsp
3. Sugar powder – ½ cup
4. Cardamom powder – ½ tsp
5. Salt – one pinch
6. Baking powder – ¼ tsp or 2 pinch of baking soda
7. Egg – 1 (at room temperature)
8. Turmeric powder – 2 pinch (only if using baking powder)
9. Ghee/oil – 1Tbsp
10. Oil for frying
Instructions
1. Mix maida, semolina, baking powder and salt in a bowl.
2. Beat egg in another bowl and add sugar powder. Mix well. Add cardamom powder and ghee.
3. Add the flour mix into the egg mix and using hands mix into soft dough. Add milk if dough is dry or more maida if it is too wet. Cover with a wet cloth and keep aside for two hours.
4. Divide the dough into two halves and make each half into a square log pattern with 1½ inch sides. Cut into 1½ inch square pieces. Using a sharp knife cut a cross mark on top side. Don’t cut too deep.
5. Deep fry on low flame till golden.
6. Transfer onto a kitchen towel in tray.
Tips
1. Use pineapple essence or vanilla essence to suit your taste in lieu of cardamom powder.
2. Wheat flour (atta) can be used in lieu of maida as per your preference.
3. If you are using baking soda, add few drops of yellow colour (optional)
