This is a popular and easy South Indian dish for breakfast and is also known as semiya upma. This upma loaded with mixed vegetables and other spices is healthy and light. This dish can be prepared at short notice without advance preparation.
Ingredients
1. Vermicelli (semiya) – 1 cup
2. Oil – 2 Tbsp
3. Peanuts – ¼ cup
4. Onion (medium) – 1 (chopped)
5. Green chilli – 2 (chopped)
6. Ginger garlic paste – 1 tsp
7. Carrot – 1 (chopped)
8. Fresh green peas – ¼ cup
9. Fennel seed (saunf) powder – 1 tsp
10. Turmeric powder – ¼ tsp
11. Pepper powder – ½ tsp
12. Red chilli powder – ½ tsp
13. Garam masala – ½ tsp
14. Coriander leaves chopped – 2 Tbsp
15. Lemon juice – 1 Tbsp
16. Salt
Preparation
1. Roast the vermicelli in 1 Tbsp of ghee or oil if not already roasted. Keep aside.
2. Boil enough water with salt to cook the roasted vermicelli. Drain the water and keep aside.
3. Heat 2 Tbsp oil and fry the peanuts on low flame and add onions chopped, green chilli, green peas and carrot. Saute and add ginger garlic. Saute till the raw smell goes. Then add fennel seed powder, turmeric powder, pepper powder, red chilli powder, garam masala and salt. Mix well and add the cooked vermicelli.
4. Cover and cook on medium flame for 2 minutes. Mix lemon juice and coriander leaves. Remove from fire and serve hot.
Suggestion
1. You can add more vegetables as per your taste.
2. This upma goes well with chutney.
