Stuffed ladies finger is a lightly spiced and shallow fried dish which is very tasty and easy to prepare.

Ingredients
For the masala
1. Roasted and peeled peanuts – 4 Tbsp
2. Coriander seed powder – 3 Tbsp
3. Sesame seeds – 1½ Tbsp
4. Cumin seeds powder – 1 tsp
5. Red chilli powder – 2 tsp
6. Turmeric powder – ½ tsp
7. Salt
8. Dry mango powder (aamchur) – 1 tsp
9. Asafetida (hing) – ¼ tsp
10. Garlic – 5-6 cloves
11. Oil – 1 Tbsp
12. Chickpea flour (besan) – 1½ tsp
Other ingredients
1. Ladies finger – 250 gm
2. Oil – 2 Tbsp
3. Asafetida – ¼ tsp
Preparation
1. To prepare the masala, mix all the ingredients for the masala in a mixer jar and crush it to a coarse mixture. Keep aside.
2. Wash and dry the ladies fingers. Remove the ends of the ladies fingers and give a long slit in the centre. Do not split the ladies fingers.
3. Stuff the mixture in all ladies fingers and keep aside. Save the left over stuffing.
4. Heat oil in a pan. Add asafetida and stir well. Now gently place all the ladies fingers in the pan and stir fry it for 1 minute and cook for 10 minutes on low flame stirring gently in between.
5. Mix the left over stuffing and mix well and cook for another 2-3 minutes.
6. Remove from fire and serve hot.
Tips
1. Dry the ladies finger before cutting.
2. Use a dry cutting board and dry knife.
3. Do not over stir while frying.
