STREET STYLE CHICKEN FRY


This is an Andhra street style chicken fry where chicken is marinated and cooked until tender and stir fried.


Ingredients

1.    Chicken pieces – 500 gm

2.    Ginger garlic paste – 2 tsp

3.    Curry leaves – few

4.    Pepper powder – ½ tsp

5.    Red chilli powder – 1½ tsp

6.    Turmeric powder – ½ tsp

7.    Cumin powder – ½ tsp

8.    Coriander powder – 1 tsp

9.    Green chilli chopped – 1

10. Lemon juice – 2 Tbsp

11. Garam masala powder – 1 tsp

12. Fennel powder – ¼ tsp

13. Curd – 2 Tbsp

14. Onion thinly sliced – 3 (medium sized)

15. Oil – 3 Tbsp

16. Cloves – 2

17. Cinnamon – 1

18. Cardamom – 1

19. Coriander leaves

20. Onion rings of 1 onion.


Preparation

1.    Heat oil and fry the sliced onions till golden brown. Remove onion from oil and keep aside.

2.    Wash and clean the chicken pieces and marinate with turmeric powder. Red chilli powder, salt, ginger garlic paste, curry leaves, pepper powder, coriander powder, jeera powder, garam masala powder, green chilli, fennel powder, curd and 1 Tbsp of lemon juice. Mix well and add the crushed fried onion and keep aside for 30 minutes.

3.    Heat a pan and add 2 Tbsp of oil which was used for frying the onion. Add whole spices and sauté for few seconds.

4.    Add the marinated chicken. Sauté on high flame for 4-5 minutes, stirring continuously. Lower the flame and cook covered for 3-4 minutes.

5.    Add chopped coriander leaves. Mix well and cook covered till done.

6.    Open and stir fry for few minutes. Add 1 Tbsp of lemon juice and chopped coriander leaves. Mix well.

7.    Add onion rings and stir fry for 2-3 minutes and serve hot.
