Spinach soup is a nutritious, delicious and healthy soup. It is rich and creamy which can be served as an appetizer. Soup is an easy way to introduce greens to your diet.
Ingredients
1. Spinach (Palak) – 250 gm
2. Garlic – 5 cloves
3. Onion chopped – 1 large
4. Bay leaf – 1
5. Cinnamon – 1 inch
6. Corn flour – 1 tsp
7. Milk – ¼ cup
8. Pepper – 1 tsp
9. Salt
10. Fresh cream – 2 Tbsp
Preparation
1. Heat butter in a pan. Add bay leaf, cinnamon stick and garlic. Saute for a minute and add the chopped onions. Saute till soft.
2. Add the chopped spinach and sauté on medium flame for 3-4 minutes till the leaves are soft. Remove from flame and remove the bay leaf and cinnamon stick. Cool the mixture and blend it to a puree.
3. Heat the same pan and add the puree with 1½ cup of water. Let it boil. Add salt and pepper and cook on medium flame stirring in between.
4. Add milk, stirring continuously. Cook for 2-3 minutes. Mix in fresh cream. Stir well and remove from flame. Mix little crushed pepper and garnish with fresh cream.
Tips
1. Adjust the consistency of soup by varying quantity of water.
2. Maida or atta can be substituted for corn flour.
