SPINACH CORN SANDWICH

This is a common Indian street food sandwich which is simple and easy to make with spinach and corn stuffing. It is a perfect and balanced dish. This is also a good way of including greens to your diet.

Ingredients

1. Butter – 1 Tbsp

2. Garlic chopped – 3-4 cloves

3. Onion chopped – 1 medium

4. Spinach chopped -1 cup

5. Corn cooked – ½ cup

6. Oregano – 1 tsp

7. Chilli flakes – 1 tsp

8. Maida – 1 tsp

9. Milk – ½ cup

10. Cheese grated – ½ cup

11. Salt

12. Bread slices

13. Cheese slices or grated

14. Butter


Preparation

1. Heat 1 Tbsp butter in a pan and add the crushed garlic. Saute and add onion. Cook till onions are transparent.

2. Add the spinach and sauté till cooked.

3. Add the boiled corn and mix well with salt, oregano, nutmeg powder and chilli flakes. Mix well.

4. Add maida, milk and cheese. Cook on medium flame till it thickens.

5. Remove from fire and cool.

6. Spread butter on one side of the bread slice and spread the stuffing on the other side and spread cheese on top of it. Cover with another slice of bread with the buttered side being on top.


Tips

1. It can be made on a tawa toasting both sides.

2. Nutmeg powder can be substituted for oregano.
