This is a yummy dish for peanut butter lovers. It is a simple and easy to prepare delicious dish with complex flavours.
Ingredients for Peanut Butter Sauce
1. Sliced onion - 1
2. Garlic chopped – 1 tsp
3. Ginger chopped – 2 tsp
4. Peanut butter – 2 Tbsp
5. Coconut milk - cup
6. Soya sauce – 1 Tbsp
7. Sugar – 1 Tbsp
8. Vinegar – 1 Tbsp
9. Red chilli powder – 1 tsp (optional)
10. Chilli flakes – 1 Tbsp
11. Oil – 1 Tbsp
Other ingredients
1. Boiled rice noodles – 2 cups
2. Paneer – 100 gm
3. Mushroom – 200 gm
4. For garnishing - Chopped coriander, chopped spring onion, roasted sesame seeds, roasted peanuts
Preparation
1. Shallow fry paneer cubes with little salt and pepper and keep aside.
2. Shallow fry mushrooms pieces with salt and pepper and keep aside.
3. Heat oil in a pan and add chopped ginger. Sauté for few seconds.
4. Add onion and garlic. Sauté till soft.
5. Add coconut milk. Mix well.
6. Add peanut butter. Mix well. Add soya sauce, sugar, chilli powder, chilli flakes, vinegar and mix well. Keep aside.
7. Add boiled noodles and mix well.
8. Add fried paneer and mushrooms before serving.
9. Serve hot after garnishing.
Tips
1. For a vegan version use tofu in lieu of paneer.
2. For non vegetarians use stir fried chicken in place of paneer.
3. Hot water can also be used in lieu of coconut milk.
4. Any noodles can be used for this dish.
5. Some vegetables like carrots can be added along with onions.
