Crab roast is a traditional side dish of Kerala and coastal areas of other States. This is a delicious and spicy dish and is served with rice, appam, paratha etc.
Ingredients
1. Crab – 1 kg
2. Onions chopped – 4
3. Green chilli – 6
4. Tomatoes – 3
5. Ginger – 2 inch piece
6. Garlic – 10-12 cloves
7. Shallots sliced - 15
8. Fennel seeds – 2 tsp
9. Peppercorns – 1Tbsp
10. Curry leaves
11. Red chillies – 2
12. Thick coconut milk – 1 cup
13. Kokum – 2 piece
14. Turmeric powder – ½ tsp
15. Coriander powder – 2 Tbsp
16. Kashmiri chilli powder – ½ Tbsp
17. Garam masala powder – 1 tsp
18. Pepper powder – 2 tsp
19. Coconut oil – ¼ cup
20. Salt
For seasoning
1. Oil – 1 Tbsp
2. Shallots sliced – 5
3. Curry leaves
4. Red chili flakes – 1 tsp
5. Pepper powder – 1 tsp
Preparation
1. Cut and clean the crab into pieces. Keep aside.
2. Crush the ginger, garlic, green chillies, fennel seeds, peppercorns and curry leaves. Keep aside.
3. Heat oil in a deep bottom kadai or pan or earthen pot. Add red chillies, curry leaves and sauté for few seconds. Lower the flame and add the crushed masala.
4. Stir fry on low flame for a minute. Add the chopped onions, sliced shallots and salt. Sauté and cook covered on medium flame for 2-3 minutes. Stir in between.
5. Add chilli powder, turmeric powder, garam masala and mix well on low flame.
6. Add the chopped tomatoes and mix well. Cook covered for 5 minutes, stirring in between till the oil separates.
7. Add kokum and the crab pieces and mix well.
8. Add curry leaves and salt. Keep stirring for 2-3 minutes and cook covered for 15 minutes on low flame, stirring in between.
9. Add ½ cup of coconut milk. Mix and cook for 5 minutes.
10. Add garam masala powder and pepper powder. Add the remaining coconut milk and mix well. Boil and remove from fire.
11. For seasoning. Heat oil in a pan and add shallots and curry leaves. Stir fry till the onions are brown. Remove from fire.
12. Add pepper powder and chilli powder. Mix well and pour over the crab curry and mix well.
Tips
1. You can reduce pepper powder and green chillies as per your preference.
