SPICY CHICKEN ROAST

This is a unique chicken roast that is prepared by pan frying chicken with thick spicy masala. This is a delicious and semi dry dish which is full of flavors.



Ingredients

1. Medium sized chicken pieces – 1 kg

2. Onion – 1 big

3. Tomato – 2 big

4. Ginger – 1 inch piece

5. Garlic – 5-6 cloves

6. Peppercorns – 1 Tbsp

7. Turmeric powder – 1 tsp

8. Kashmiri dry red chilli – 10-12

9. Garam masala – 2 tsp

10. Curry leaves

11. Coriander leaves

12. Salt

13. Oil – 3-4 Tbsp


Preparation

1. Grind onion, tomato, ginger garlic, peppercorn, dry red chillies to a coarse paste without adding water. Keep aside. Add ½ cup of water to the mixer jar, blend and keep the water aside.

2. In a pan heat oil. Add the ground paste. Stir fry on low flame, adding salt, for 2-3 minutes.

3. Add the above blended water and cook covered on medium flame for 10-15 minutes till oil separates. Stir in between.

4. Add chicken, turmeric powder and garam masala. Mix well and cook covered for 15-20 minutes till it becomes almost dry. Stir in between.

5. Add curry leaves and coriander leaves and mix well and remove from flame. Ready to serve.

Tips

1. Adjust the spices as per your preference.

2. Chicken masala also can be added in place of garam masala.

3. Coconut oil gives the best flavour but any oil can be used.

4. 1 tsp of pepper powder can be mixed with curry leaves to enhance the taste.
