SPECIAL SPICY EGG FRY

Meet my favorite fried egg. A simple and easy to make egg fry with a twist. This is a specialty of the Northern Kerala. It is called Idimutta since it is made in the idly thatu and then fried and dressed to perfection. If you are short of time, go for this. You will love it.


Ingredients

1. Eggs – 4

2. Chilli powder Kashmiri – 2 Tbsp

3. Turmeric Powder – ½ tsp

4. Pepper powder – ½ tsp

5. Garam masala – ½ tsp (or Egg masala)

6. Ginger Garlic paste – 1 Tbsp

7. Chopped curry leaves – 1 Tbsp

8. Salt to taste

9. Oil for frying





Instructions

1. Brush oil on an idly steamer

2. Break one egg each into the idly mould

3. Steam cook for 8-10 minutes till it's cooked and keep aside to cool.

4. Mix ingredients at steps no. 2-8 above with little water to make a paste.

5. Marinate the eggs with above paste and keep for 30 minutes.

6. Shallow fry the eggs in oil

7. Garnish with fried curry leaves and serve hot.
