SOYA CHUNKS ROAST

Soya chunks is also known as vegetarian meat since it has meaty taste and fibrous texture. A delicious vegetarian side dish for chapatti, roti, naan etc. Soya chunks are very healthy as it is rich in protein, Vitamin D, Calcium, Iron and Omega 3 fatty acids.

Ingredients

1. Tomatoes sliced – 2 big

2. Ginger juliennes – 1½ Tbsp

3. Kashmiri chilli powder – 2½ Tbsp

4. Turmeric powder – 1 tsp

5. Coriander powder – 1 tsp

6. Cumin powder (jeera) – ½ tsp

7. Garam masala – 1 tsp

8. Pepper crushed – 1 tsp

9. Salt

10. Oil

11. Curry leaves

12. Cinnamon – 1 inch piece crushed

13. Cloves – 4 crushed


Preparations

1. Soak the soya chunks in hot water with salt for 30-40 minutes. Then squeeze out the water and transfer into cold water and again squeeze out the water. Once again put it in cold water and squeeze out the water. Keep aside.

2. Make a paste of 1 Tbsp of Kashmiri chilli powder, coriander powder, ½ tsp turmeric powder, garam masala, jeera powder, pepper powder, salt and 1 tsp of oil.

3. Marinate the soya chunks with the above paste and keep aside for 15-20 minutes.

4. Heat 1 Tbsp oil and add crushed cinnamon and cloves, ½ Tbsp ginger juliennes and sauté for a minute and add the marinated soya chunks. Stir and sauté for 2-3 minutes.

5. Add ½ cup of water and cook covered on medium flame for 5 minutes.

6. Make a paste of 1 Tbsp of Kashmiri chilli powder and ½ tsp of turmeric powder with little water. Keep aside.

7. Heat 1 Tbsp oil and add 1 Tbsp of ginger and sauté. Add tomatoes, salt and ½ Tbsp of Kashmiri chilli powder. Stir and cook till tomatoes are mushy.

8. Add the cooked soya and mix well. Add little water and keep stirring till it is thick.

9. Add the masala paste and curry leaves. Stir on high flame till gravy becomes thick and oil separates. Remove from fire. Serve hot.


Tips

1. Adjust the spices as per your preference.

2. Coconut oil gives an authentic taste.
