SOAKING OF FRUITS IN JUICE FOR CAKES

Usually the dry fruits for cakes are soaked in liquor. However, for the non alcoholic version the dry fruits are soaked in orange juice or grape juice.


Ingredients

1. Fresh orange juice – 1½ cup

2. Sugar – 1¼ cup

3. Mixed fruit jam – 50 gm

4. Lemon juice – 2 Tbsp

5. Dry fruits chopped – 600gm (may include raisins (black & golden mixed) – 1 cup, dates – 50 gm, cashew nuts dry roasted – ¼ cup, cherry – 100 gm, tooti fruitti – 75 gm, dry ginger peel – 3 Tbsp, dry orange peel – 2 Tbsp, cranberries – ¼ cup, dry pineapple etc)

6. Spice powder – 2 Tbsp ( cardamom, cloves, nutmeg, mace and cinnamon in equal quantities)


Preparation

1. In a pan mix well sugar, jam, orange juice and lemon juice and heat it on high flame till it boils. Reduce the flame to medium and cook till the syrup becomes slightly sticky.

2. Add raisins and mix well.

3. Add the dates, cherries, tutti fruitti and cashew nuts, mixing in sequence after each addition.

4. Add the ginger peel and orange peel and mix well.

5. Add the spice powder and mix well. Remove from fire and cool it.

6. Store in air tight glass container at least for a week before making the cake.


Tips

1. Fruits and nuts can be varied as per your choice. The nuts should be dry roasted always, otherwise the cake tend to get spoiled faster.

2. Always use dry utensils. There should be no trace of water at any stage.

3. Grape juice or pineapple juice can be used in place of orange juice.

4. If you are not getting dry ginger peel, then use dry ginger powder.
