SAMBAR (KERALA STYLE)

Sambar is an essential dish for Onam sadya and as such is a popular dish at all times. It is a hot and spicy lentil soup with mixed vegetables. It is prepared with chana dal or tuvar dal. It is a healthy and adds a significant amount of vegetables to the meal. There are many varieties of sambar existing in the Southern states.


Ingredients

1. Tuvar dal or chana dal – ½ cup

2. Tomato – 1

3. Turmeric powder – ½ tsp

4. Vegetable pieces – 2 cups (Drum stick, brinjal, raw plantain, ashguard, pumpkin, potato, onion, carrot etc)

5. Green chilli – 2

6. Chilli powder – ½ tsp

7. Sambar powder – 3 Tbsp

8. Coriander powder – 1 tsp

9. Tamarind – 1 lemon size (soak in 1 cup of water)

10. Shallots – 12-15

11. Garlic – 4-5 cloves

12. Salt

13. Jaggery – 1 Tbsp

14. Asafoetida (hing) – ¼ tsp

15. Coconut oil or sesame oil – 1tsp

16. Coriander leaves


For Tempering

1. Coconut oil or sesame oil – 2 Tbsp

2. Mustard seeds – 1 tsp

3. Dry red chillies – 4

4. Curry leaves

5. Fenugreek powder – ¼ tsp

6. Asafoetida – ¼ tsp


Preparation

1. Wash and pressure cook the dal by adding 4 cups of water, turmeric powder, asafoetida, cubed tomatoes and salt for one whistle on medium heat. Open the cooker and mash the dal and tomatoes.

2. Add the vegetables and cook for 1 whistle on high flame. Add tamarind water, green chilli, curry leaves and jaggery and boil for 5 minutes.

3. Heat 1 tsp coconut oil and sauté the shallots and garlic for 2 minutes and reduce the flame to low and add turmeric powder, chilli powder, coriander powder and sauté and add 3 Tbsp sambar powder. Saute for few seconds. Add this to the cooked vegetable mix and boil for 5 minutes and remove from fire adding chopped coriander leaves.

4. Heat oil in a pan. Crackle mustard seeds. Reduce the flame. Add red chillies, curry leaves, fenugreek powder and sambar powder. Mix well and add to the cooked sambar.


Tips

1. If you like sweetness, add more jaggery.

2. Use vegetables of your choice. It can be made with single vegetable such as drum stick, shallots etc.

3. Vegetables and dal can be cooked separately also and then mixed together.
