RUM AND RASIN CAKE

An easy to make moist and aromatic raisin cake flavoured with rum. The cake is perfect for Christmas and holidays.


Ingredients

1. Maida – 200 gm

2. Baking powder – 1 tsp

3. Sugar – 200 gm

4. Cloves – 4

5. Cinnamon – 1 inch piece

6. A small piece of nutmeg

7. Cardamom – 1

8. Butter – 200 gm

9. Eggs – 4

10. Black raisins chopped – 1 cup

11. Golden raisins chopped – 1 cup

12. Rum – 1 cup


Preparation

1. Soak the raisins in rum for at least 12 hours

2. Preheat the oven to 180 degree celcius.

3. Powder the sugar along with the spices

4. Beat the butter till soft. Beat again adding sugar powder mix till creamy.

5. Add eggs, one at a time, and beat till soft and creamy. Keep aside.

6. Mix the baking powder with maida. Keep aside.

7. Drain the soaked raisins and mix with ¼ cup of the above maida mix.

8. Fold the maida mix and the raisin mix into the batter and fold well.

9. Add the strained rum and mix well. The batter should be of dropping consistency.

10. Pour into a greased baking dish and bake for 35-40 minutes or till done.


Tips

1. Reduce the quantity of rum as per your choice.
