It is a crispy and tasty vada popular in South India. The conventional vada is prepared with urad dal whereas rice flour is used in this vada.

Ingredients
1. Rice flour – 1 cup
2. Rawa (suji/semolina) – ¼ cup
3. Curd – ¾ cup
4. Cumin seeds – 1 tsp
5. Ginger grated – 1 Tbsp
6. Chopped green chilli – 1 or 2
7. Shallots/onion chopped – ½ cup
8. Curry leaves chopped – 2 Tbsp
9. Coriander leaves – ¼ cup
10. Asafoetida – ¼ tsp
11. Crushed pepper – 1 tsp
12. Grated coconut – ¼ cup
13. Salt
14. Oil for frying
Preparation
1. Mix curd and enough water with rice flour and rawa to make it a thin batter.
2. Cook the batter with salt on low flame till it become thick in consistency like soft dough. Transfer to another vessel. Cool it slightly and mix the rest of the ingredients and make soft dough.
3. Apply some oil or water on your palms and shape the dough into small vadas.
4. Heat oil in a pan on high flame and reduce the flame to medium and fry the vadas from both sides till golden brown.
5. Serve hot with chutney.
Tips
1. Shallots are preferred over onion for authentic flavour and taste.
