The green mango salad is vegan and gluten free salad which is healthy and delicious. It’s ideal for the summer months.
Ingredients
1. Raw mango – 1 big
2. Cucumber – 1
3. Carrot – 1
4. Roasted peanuts – 4 Tbsp
5. Lemon juice – 1 Tbsp
6. Olive oil – 2 Tbsp
7. Chilli flakes – 1 tsp
8. Honey – 1 Tbsp
9. Minced garlic – 1 tsp
10. Fish sauce – 1 tsp (optional)
11. Mint leaves – 1 Tbsp
12. Coriander leaves – 2 Tbsp
13. Roasted sesame seeds – 1 Tbsp
14. Salt
Preparation
1. For the salad dressing mix olive oil with lemon juice, chilli flakes, honey, garlic, fish sauce and salt and keep aside.
2. Thinly slice the mangoes, cucumber and carrot.
3. Mix the cut vegetables with salad dressing and crushed peanuts, coriander leaves, mint leaves, sesame seeds.
4. Garnish with crushed peanuts and sesame seeds.
5. Serve chilled.
Tips
1. Soya sauce can be used in place of fish sauce.
2. Brown sugar can be used in place of honey.
3. Grated coconut, beans sprout etc also can be added.
