This is a simple, easy, flavourful and quick recipe. Rasam is a most basic and essential dish in a South Indian meal. It can also be served as a soup. This healthy dish is said to possess a lot of medicinal values. It aid digestion and is good to have during common cold.
Ingredients
1. Tomato – 2
2. Pepper – 2 tsp
3. Jeera (cumin seeds) – 1 tsp
4. Garlic cloves – 6-8
5. Coriander leaves – 2-3 Tbsp
6. Tamarind pulp – a small lemon size
7. Curry leaves
8. Salt
9. Asafoetida (hing) - ¼ tsp
10. Red chillies – 2
11. Mustard seeds – ½ tsp
12. Jaggery – 1 Tbsp (optional)
13. Ghee or oil – 1 Tbsp
Preparation
1. In a mixer grinder add chopped tomatoes, pepper, jeera, garlic, coriander leaves, tamarind, curry leaves and grind to a coarse paste and keep aside.
2. Heat ghee in a pan on medium flame and add mustard seeds, red chillies, ¼ tsp jeera, curry leaves, pinch of hing, pinch of turmeric and stir fry for 2-3 seconds.
3. Add the paste. Sauté till ghee separates.
4. Add enough water (3 cups), jaggery and salt.
5. Bring to boil.
6. Serve hot.
Tips
1. Preparation in ghee gives better flavour than oil.
2. Adjust jaggery and pepper as per your preference.
