RAGGI DOSA IDLI

It is a healthy and easy to prepare dish for breakfast or for any time. Raggi idlis are steamed cakes prepared with finger millets (raggi). This is a soft and healthy meal from South India. Raggi is loaded with vitamins, minerals and anti oxidants and has high protein and fibre.

Ingredients

1. Whole raggi – 1½ cup

2. Brown rice or idli rice – ½ cup

3. Urad dal – ½ cup

4. Fenugreek seeds – 1 Tbsp

5. Brown rice flakes or poha – ¼ cup

6. Salt


Preparation

1. Wash and soak raggi, rice, urad dal and fenugreek seeds for five hours.

2. Soak the rice flakes for 15 minutes.

3. Grind all the soaked and drained ingredients together to a batter of smooth consistency.

4. Add salt and mix well. Let the batter ferment for 8-10 hours.

5. Prepare idlis or dosas or uthapams or paniyarams of your choice. For making dosas add little water to the batter and mix well.
