PRAWNS ROAST (KERALA STYLE)

This is a signature sea food dish with delicious flavour and aroma from God’s own country. This is a yummy side dish with a perfect blend of spices which goes well with rice, rotis, Appam etc. A ‘must have’ dish for the prawn lovers.


Ingredients

1. Prawns cleaned – 500 gm

2. Ginger garlic crushed – 2 Tbsp

3. Sliced onion – 1 big

4. Sliced shallots – 12

5. Green chilli (slitted ) – 4

6. Chilli powder – 2 Tbsp

7. Coriander powder – 1 tsp

8. Turmeric powder – 1 tsp

9. Garam masala powder – 1 tsp

10. Pepper powder – 1 tsp

11. Fennel seed (saunf) powder – 1 tsp

12. Thinly sliced coconut bites – 1 cup

13. Kokum – 2 pieces (wash and soak in 1 cup water for 10 minutes)

14. Vinegar – 1 Tbsp

15. Curry leaves

16. Salt

17. Coconut oil – 3 Tbsp


Preparation

1. Marinate the cleaned prawns with 1 Tbsp chilli powder, ½ tsp turmeric powder, salt and 1 Tbsp vinegar for 30-45 minutes.

2. Cook covered the prawns with 1 Tbsp ginger garlic, soaked kokum along with its water, curry leaves and ½ cup coconut bites for 10 minutes on medium flame.

3. Open the lid and cook till the gravy is almost dry and keep aside.

4. Heat oil in another pan and add the remaining coconut bites. Saute well till light brown and add the rest of the ginger garlic. Saute for a minute.

5. Add sliced onion, shallots, green chillies and little salt. Saute till the onions change colour to light brown.

6. Add rest of the chilli powder, turmeric powder, coriander powder, garam masala, pepper powder and fennel seed powder. Mix and sauté for a minute till the raw smell goes.

7. Add the cooked prawns and mix well so that the masala is coated well on the prawns. Add enough curry leaves and sauté on low flame for 4-5 minutes.

8. Sprinkle 1 tsp of coconut oil and mix well. Let it rest for about one hour before serving.


Tips

1. Coconut oil and coconut bites give the authentic taste.

2. Adjust the spices as per your preference.

3. If you don’t have kokum, add 02 sliced tomatoes after the onions are browned.

4. It can be prepared without the coconut bites also.
