This is an easy to prepare simple dish which is tasty and delicious. It is a traditional quick one pot meal in Northern Kerala. Prawns rice is a very filling meal with lots of flavours and nutrients.
Ingredients
1. Prawns cleaned – 250 gm
2. Rice – 2 cups (basmati or jeera rice preferred)
3. Oil – 3 Tbsp
4. Onions sliced – 2
5. Ginger – 1 inch
6. Garlic – 6 cloves
7. Green chilli – 2
8. Tomato sliced – 1
9. Chilli powder – ½ tsp
10. Coriander powder – ½ tsp
11. Turmeric powder – ¼ tsp
12. Garam masala powder – 1 tsp
13. Fennel seed powder – ¼ tsp
14. Pepper powder – ½ tsp
15. Curry leaves
16. Coriander leaves
17. Lemon – 1
18. Salt
19. Ghee – 1 Tbsp
For marination
1. Turmeric powder – 1 tsp
2. Kashmiri chilli powder – 2 tsp
3. Coriander powder – 4 tsp
4. Vinegar – 2 Tbsp
5. Salt
Preparation
1. Marinate the prawns with turmeric powder, kashmiri chilli powder, coriander powder, vinegar and salt for 30 minutes at least. Keep aside.
2. Wash and soak rice for 30 minutes.
3. Crush the green chillies, garlic and ginger and keep aside this paste.
4. Heat 3 Tbsp oil and fry the marinated prawns on medium flame for 3-4 minutes. Keep aside.
5. In the same oil add onions and sauté till light brown on medium flame and add the crushed paste and curry leaves. Saute for 2 minutes and add the chopped tomato and salt. Mix well and cook covered for 3-4 minutes till it become soft.
6. Mash it with a spoon and add chilli powder, coriander powder, turmeric powder, pepper powder, garam masala and fennel seed powder. Mix well.
7. Add fried prawns and mix well and cook covered for 2-3 minutes. Add coriander leaves and lemon juice and ½ tsp garam masala. Mix well. Keep aside.
8. Boil 4 cups of water and add to the above prawns masala mix. Add 2 tsp of ghee and mix well and let it boil.
9. Add the soaked and drained rice. Cook covered on low flame for 10-12 minute and remove from flame.
10. Serve hot.
Tips
1. For a simpler version, after frying the prawns mix cooked rice and mix well in the same pan.
