PRAWNS CURRY KERALA STYLE

Prawns curry is a spicy, flavourful and delicious dish popular in Kerala especially along the coastal region.


Ingredients

1. Prawns cleaned – 250 gm

2. Shallots sliced – 8-10

3. Ginger garlic crushed– 1 Tbsp

4. Curry leaves

5. Kokum – 2 pieces

6. Turmeric powder – ½ tsp

7. Kashmiri red chilli powder – 1½ Tbsp

8. Garam masala – ½ tsp

9. Pepper powder – 1 tsp

10. Fenugreek powder – ¼ tsp

11. Salt

12. Oil – 2 Tbsp

For tempering

1. Mustard seeds – 1 tsp

2. Dry red chillies – 2

3. Shallots sliced – 2-3

4. Turmeric powder – ¼ tsp

5. Chilli powder – ½ tsp

6. Curry leaves


Preparation

1. Wash and soak the kokum in 1 cup of water and keep aside.

2. Heat oil in a clay pot or pan. Add ginger garlic, shallots and curry leaves. Sauté till they turn brown. Lower the flame and add turmeric powder. Stir fry.

3. Add chilli powder and sauté for few seconds. Add pepper powder, garam masala and fenugreek powder. Stir fry.

4. Add kokum along with the water and salt. Let it boil.

5. Add prawns and stir well. Cook covered on medium flame for 8-10 minutes or till it is cooked.

6. Heat oil in another pan. Crackle mustard seeds. Add dry red chillies, shallots and curry leaves. Lower the flame. Add turmeric powder and red chilli powder. Stir and add to the prawns curry. Keep it covered for some time before serving.


Tips

1. Do not overcook prawns. It may become rubbery.
