PINEAPPLE TRUFFLE PUDDING

This is a simple, delicious and refreshing no bake pineapple pudding. This is an easy to prepare dish which is a perfect ‘make ahead’ dessert for any event.


Ingredients

1. Pineapple chopped – 2 cups

2. Sugar – 4 Tbsp

3. Arrowroot biscuits – 10-12

4. Almonds chopped – ½ cup

5. Milk – 750 ml

6. Pineapple essence – ½ tsp

7. China grass – 10 gm

8. Water – 1 cup

9. Condensed milk – 1 tin (400 gm)

10. Turmeric powder – 2 pinch (optional)


Preparation

1. Soak the china grass pieces in 1 cup of water and keep aside for 15-20 minutes.

2. Take 250 ml of milk in a bowl. Dip the biscuits, one by one, and spread them at the bottom of serving dish.

3. In a pan cook the chopped pineapple with 3-4 Tbsp sugar (depending on the sweetness of the pineapple) and a pinch of turmeric powder till it dries up.

4. Add the chopped almonds and stir well. Cool it and spread over the biscuit layer. Keep aside.

5. In another pan melt the soaked china grass on low heat.

6. Simultaneously in another pan heat 500 ml of milk with a pinch of turmeric powder. Reduce to low flame. Add condensed milk and mix well.

7. Add the melted china grass to the milk mixture, stirring continuously for one minute and remove from flame.

8. Add pineapple essence and mix well. Cool it slightly till it starts thickening and pour over the pineapple.

9. Cool and refrigerate for 3-4 hours or till it sets.

10. Garnish with some pineapple pieces, biscuit crumbs, cashew nuts etc.


Tips

1. Do not use instant china grass mix for this dish.

2. Some chopped dates can be mixed with pineapple as per your liking.

3. Dessert gets better after it sits.

4. Yellow pineapple sponge cake soaked in pineapple juice or sugar syrup can replace the biscuit layer at the bottom.

5. Adjust the sweetness as per your preference.

6. Quantity of condensed milk can be reduced by adding more sugar.
