Pachadi(Raita) is a traditional Kerala side dish which is made in coconut and yogurt based gravy. There are plenty of varieties of Pachadi and is an integral part of sadya (meal). Pineapple pachadi is a delicious raita with a sweet and tangy taste. It is a magical combination of tastes in itself. Somewhere I read it to be a “marriage of the perfect sweet and tart recipe”.
Ingredients
1. Pineapple (ripe) chopped – 1 (peeled and cored)
2. Turmeric powder – ½ tsp
3. Chilli powder – 1 tsp
4. Green chilli chopped – 2
5. Curry leaves
6. Salt
7. Jaggery powder – 2 Tbsp
8. Curd – 1 cup
For the Paste
1. Cumin seeds – 1 tsp
2. Coconut grated – 1 cup
3. Mustard seeds – ¼ tsp
4. Green chillies - 2
For the Tempering
1. Mustard seeds – ½ tsp
2. Curry leaves
3. Red chillies – 3
4. Coconut oil – 1 Tbsp
Preparation
1. Mix the pineapple pieces with turmeric powder, chilli powder, green chillies, salt and curry leaves in a pan. Cook on low flame for 3-4 minutes and add jaggery powder. Mix well.
2. Grind coconut with jeera and green chillies to a smooth paste. Add crushed mustard seeds and add to the cooked pineapple. Stir and cook for 2-3 minutes. Remove from heat and add the beaten curd stirring well.
3. Heat oil and crackle mustard seeds, red chillies and curry leaves. Fry and add to the curry. Mix well and let it rest for some time before serving.
Tips
1. Adjust the spices and sweetness as per your preference.
2. Pineapple should be properly ripened.
