This is a simple and nut based chutney which is tangy, spicy and creamy. This easy to make chutney is a tasty and delicious accompaniment to idli, vada and dosa. In this recipe we are using roasted peanuts.
Ingredients
1. Roasted peanuts – 1½ cup
2. Garlic chopped – 1 Tbsp
3. Dry red chilli – 2
4. Onion – 2 medium chopped
5. Tamarind – ½ lime size
6. Jaggery – ½ lime size
7. Salt
8. For tempering – Oil – 1 Tbsp, dry red chilli – 2-3, mustard seeds – 1 tsp, asatofoetada (hing) – a pinch and curry leaves
Preparation
1. Heat oil in a pan. Add garlic, dry red chillies and onion. Saute till onions are soft.
2. Add salt, tamarind and jaggery. Mix well and remove from fire.
3. Cool and grind with roasted peanuts to a smooth paste by adding enough water.
For tempering. Heat oil. Crackle mustard seeds, add dry red chilli, hing and curry leaves. Saute and pour over the chutney.
