PEANUT BUTTER BREAD

This is a delicious and easy to make bread packed with peanut butter flavour. It is perfect for breakfast or as a snack or with some sweet frosting for dessert.



Ingredients

1. Maida – 300 gm

2. Salt – ½ tsp

3. Sugar – 2 Tbsp

4. Active dry yeast – 1 tsp

5. Olive oil – 1 Tbsp

6. Vanilla essence – ½ tsp

7. Egg – 1big

8. Water – 150 ml

9. Peanut butter – as needed


Preparation

1. In a bowl add egg, water, yeast, sugar, salt and olive oil and mix well.

2. Add maida, little by little, and mixing with a spatula to soft smooth dough. (Since dough is very soft don’t knead with hands)

3. Cover the bowl with a cling film or wet cloth and keep aside until it doubles its size (approx 1 to 1½ hours).

4. Remove the film/cloth from the bowl and deflate the air bubbles in the dough with a spatula by mixing it around.

5. Again cover the bowl with film/cloth and refrigerate for 8-10 hours.

6. Take out the fermented dough, sprinkle some maida and roll it into rectangular shape (approx 25x40 cm size).

7. Spread peanut butter evenly and roll up from the longer side. Pinch the edges so that it will not open up later.

8. Roll and stretch it longer (ie, from about 40 cm to 55 cm long). Pat it slightly

9. Keeping one end intact split the remaining roll into two equal strands.

10. Braid the dough (by twisting the strands over each other) and at the end of it pinch the two ends together.

11. Now coil it and fold the tip under the coil.

12. Place the dough into a round greased baking pan and cover with cling film or wet cloth. Keep aside until it doubles the size(approx 1 hour).

13. Brush milk or beaten egg on top and bake in a preheated oven at 170 degree celcius for about 20-25 minutes or until golden brown in colour.


Tips

1. Add more sugar if sweeter bread is preferred.

2. The roll can be divided into three strands also (at step 9 above).
