PALADA PAYASAM (RICE FLAKES KHEER)

This is a ‘must have’ delicacy prepared during Onam and all festivals and special occasions. It is made with rice ada (rice flakes) and milk. The slow cooked milk induces a pink colour to the dish. Nowadays readymade ada is readily available in all Kerala grocery shops.


Ingredients

1. Full cream milk – 6 cups

2. Water – ½ cup

3. Sugar – 1½ - 2 cup

4. Cardamom – 1 tsp (optional)

5. Readymade rice ada – 100gm


Preparation

1. Boil 2 ltrs of water and add the ada. Cook till soft. Strain and pour cold water on it. Strain again and keep it covered in cold water.

2. Boil ½ cup of water in a thick bottom pan and add the milk. Stir in between. When it starts boiling add half of the sugar and boil on medium flame till it starts changing the colour or quantity reduces to half. Stir in between.

3. Then add the strained ada and cook till it is thick. Keep stirring. Add rest of the sugar and cook till it is pink in colour. Mix cardamaom powder and remove from fire.


Tips

1. Cashew nuts and raisins fried in ghee can be added.
