PAD THAI NOODLES

This is a common street food of Thailand. It is a stir fried one pot meal with flat rice noodles. It is typically made with chicken, meat, tofu, prawns, scrambled egg, bean sprouts and other vegetables.


Ingredients

1. Pad Thai noodles – 200 gm

2. Garlic chopped – 1 Tbsp

3. Eggs – 2

4. Chicken boneless – 250 gm

5. Capsicum – 1 (thinly sliced)

6. Sliced onion – 1 small

7. Chopped spring onion greens – 1 cup

8. Bean sprouts (optional) – ½ cup

9. Roasted peanuts – ½ cup

10. Coriander leaves – 2 Tbsp

11. Lemon – 1 (cut into 4 pieces)

12. Sesame oil – 3 Tbsp

For Pad Thai sauce

1. Fish sauce – 3 Tbsp

2. Water (or vegetable stock) – ½ cup

3. Tamarind paste or rice vinegar – 1 Tbsp

4. Salt

5. Black pepper powder – ¼ tsp

6. Chilli flakes – ½ tsp

7. Red chilli sauce – 1 tsp

8. Soya sauce – 3 Tbsp

9. Tomato ketchup – 1 Tbsp

10. Jaggery or brown sugar – 4 Tbsp

11. Creamy peanut butter (optional) – 2 Tbsp


Preparation

1. Mix well all the ingredients for the Pad Thai sauce in a bowl and keep aside.

2. Soak the rice noodles in boiling hot water until they are soft (8-10 minutes). Drain and keep aside.

3. Cut the chicken into strips and mix with little salt, garlic powder and pepper.

4. Heat 1 Tbsp oil in a pan and stir fry the chicken pieces for 3-4 minutes or till cooked. Remove and keep aside.

5. Add 1 Tbsp of oil to the same pan and stir fry the garlic till they are golden. Add the sliced onions and capsicum and stir fry on medium flame for 2-3 minutes.

6. Add the fried chicken and boiled noodles and mix well.

7. Add Pad Thai sauce and stir fry for 2-3 minutes.

8. Push all the ingredients to the side of the pan and add 1 Tbsp of oil and add the eggs. Scramble the eggs into small pieces and stir fry and mix with the ingredients at the side of the pan.

9. Add crushed peanuts, spring onions, bean sprouts, coriander leaves, (keeping aside some quantity of each for garnishing) and mix well.

10. Garnish with lemon wedges and other ingredients for garnishing and serve.


Tips

1. For vegetarians use tofu, mushrooms instead of chicken and egg. Use more soya sauce instead of fish sauce.

2. Capsicum in different colours can be used.

3. Vegetables like carrots and cabbage can also be added.
