OLAN (VEGETABLES IN COCONUT MILK)

Olan is an integral part of Onam sadya. It is a light and mild flavoured dish prepared with ashguard, green cowpeas or red (dry) cowpeas and coconut milk. It is simple to prepare.


Ingredients

1. Ashguard cubed – 250 gm

2. Red cowpeas – ½ cup

3. Thick coconut milk – ½ cup

4. Thin coconut milk – 1 cup

5. Salt

6. Curry leaves

7. Green chillies – 2

8. Coconut oil – 1 Tbsp




Preparation

1. Soak the red cowpeas for 4-5 hours and cook it in a pressure cooker with 2 cups water for 2 whistles on medium flame. Keep aside.

2. Cook the ashguard pieces with salt and green chillies in thin coconut milk. When it is almost cooked add the cooked cowpeas, slitted green chillies and curry leaves. Cook for 3-4 minutes till it is thick.

3. Add the thick coconut milk. When it is about to boil turn off the flame and add coconut oil and few curry leaves. This is a thick curry.

4. Set aside for some time before serving.
