NAVRATAN KORMA

This is a mughlai dish which is believed to have been served to kings and other royals during Mughal era. It is a delicious, flavourful and creamy curry made with 9 vegetables, fruits and nuts.

Ingredients

1. Green peas – ½ cup

2. Beans cut – ½ cup

3. Carrot cubed – 1 cup

4. Potato cubed – 1 cup

5. Cauliflower – 1 cup

6. Makhanas (Fox nuts) – 1 cup

7. Paneer cubed – 1 cup

8. Mushrooms diced – 1 cup

9. Pineapple cubed – 1 cup

10. Onion chopped – 1 cup

11. Ginger garlic paste – 1 Tbsp

12. Green chillies – 4-5

13. Cashew nuts – ½ cup + 1 Tbsp

14. Raisins (kismis) – ¼ cup

15. Curd – ½ cup

16. Fresh cream – 1/2 cup

17. Sugar – ½ tsp

18. White pepper powder – 1 tsp

19. Saffron – a pinch (soaked in 1 Tbsp of milk)

20. Garam masala – 1 tsp

21. Cumin seeds – 1 tsp

22. Coriander leaves – 2 Tbsp

23. Fenugreek leaves (kasuri methi) – 1Tbsp

24. Ghee – 3 Tbsp

25. Pomegranate and fried cashew nuts for garnishing


Preparation

1. Soak ½ cashew nuts and raisins in hot water for 10 minutes. Keep aside.

2. Cook the onion and soaked cashew nuts with 2 cups of water in a pan and cool and grind with soaked raisins. Keep aside.

3. Blanch the vegetables (peas, beans, carrot, potato and cauliflower) and keep aside. (It can also be steam cooked)

4. Heat 1 Tbsp of ghee and fry 1 Tbsp of cashew nuts and keep aside.

5. Roast the makhanas in the same ghee. Keep aside.

6. Shallow fry paneer in the same ghee and transfer to hot water.

7. Add 2 Tbsp ghee to the same pan and add the onion paste. Sauté for 2 minutes on low flame.

8. Add ginger garlic paste and slit green chillies. Sauté for 2-3 minutes.

9. Add blanched vegetables, mushroom and mix well on medium flame.

10. Add white pepper, garam masala, salt and sugar. Mix well. Lower the flame and add the beaten curd and 1 cup of water, stirring continuously. Cook covered on low flame for 5 minutes.

11. Add the fresh cream and soaked saffron and mix well.

12. Add the fried makhanas, fried and drained paneer, coriander leaves and crushed fenugreek leaves. Mix well and remove from flame.

13. Garnish with fried cashew nuts and pomegranate. Serve hot.


Tips

1. Diced apple and grapes can also be added.

2. Black pepper powder can also be used.
