MUSHROOM COCONUT STIR FRY

This mushroom stir fry is simple and delicious with a wonderful aroma. Mushroom and coconut makes a wonderful combination. This Kerala style stir fry goes well with rice and roti.


Ingredients

1. Shallots – 10

2. Garlic cloves – 5

3. Red chillies – 3

4. Coconut bites – ½ cup

5. Curry leaves

6. Kashmiri chilli powder – 1 tsp

7. Pepper powder – ½ tsp

8. Turmeric powder – ¼ tsp

9. Mustard seeds – ¼ tsp

10. Lemon juice – 1 Tbsp

11. Mushroom – 250 gm

12. Coconut oil – 1 Tbsp

13. Salt


Preparation

1. Crush shallots, garlic and red chillies.

2. Cut the mushroom into 2 or 4 depending on the size

3. Heat oil in a pan or kadai and crackle mustard seeds. Add coconut bites and sauté till light golden colour on medium flame.

4. Add crushed masala and sauté for a minute.

5. Add the cut mushroom, salt, kashmiri chilli powder, turmeric and pepper powder. Mix well and cook covered till the water dries up.

6. Add curry leaves and stir fry for a minute.

7. Add lemon juice. Mix well and remove from flame.

8. Cover and keep aside for a while before serving.
