MOIST CHOCOLATE CAKE

This is a rich, delicious and moist chocolate cake with a fluffy texture and easy to make. It has the perfect amount of sweetness whether you eat it plain or dust it with powdered sugar or serve with ice cream.

Ingredients

1. Sugar powder – 350 gm

2. Unsweetened cocoa powder – 60 gm (¾ cup)

3. Baking powder – 1 tsp

4. Baking soda – 1 tsp

5. Maida – 300 gm( 2½ cup )

6. Salt – ½ tsp.

7. Vegetable oil – 125 ml (½ cup )

8. Eggs – 2 large

9. Hot water – 250 ml (1 cup)

10. Buttermilk – 250 ml (1 cup)

11. Vanilla essence – 1½ tsp


Preparation

1. Preheat oven to 180 degree Celsius.

2. For preparing buttermilk mix 1 cup warm milk with 1 Tbsp vinegar and keep it for 10-15 minutes.

3. Grease an oven proof dish and keep aside.

4. Sift together dry ingredients (sugar, cocoa, maida, baking powder, baking soda and salt) and keep aside.

5. Whisk together the wet ingredients (oil, eggs, water, butter milk and vanilla essence) till creamy and pour into the dry mixture and mix well. The batter is thin in consistency. Pour into the baking dish and bake for 35-40 minutes or till done.


Tips

1. The hot water can be substituted with hot coffee adding 1 Tbsp of instant coffee to the hot water.

2. After mixing the batter do not delay in baking.

3. Cool it well before taking out the cake from the dish.

4. Don’t over mix or over bake.

5. Cup cakes and muffins can also be made with the same batter in which case the baking time will reduce accordingly.

6. Add more sugar if you want it sweeter.
