This is an Indian sweet dumpling and is one of the ‘must make’ dish during Ganesh Chaturthi celebrations. Modak in a round shape is called as ‘kozhukatta’ in Kerala and is a traditional dish during Easter season. It is made from steamed rice flour stuffed with jaggery and grated coconut. It is an easy to make recipe for breakfast and evening snacks.
Ingredients
For the outer cover
1. Fine rice flour – 1 cup
2. Water – 1¼ cup
3. Ghee – 1 tsp
4. Salt
For the stuffing
1. Grated coconut – ½ cup
2. Jaggery powder – ¼ cup
3. Cardamom powder – ½ tsp
4. Ghee – 1 tsp
Preparation
1. For the stuffing – Mix jaggery with little water and make a syrup and strain it. Heat ghee,add grated coconut and jaggery syrup. Cook on medium flame till it dries up and then add cardamom powder. Keep aside.
2. Boil 1¼ cups of water. Mix rice flour with salt and add the boiled water and ghee.
3. Mix to a smooth dough. If dough is dry add more boiled water. Keep aside.
4. Make small balls of the rice dough and stuff it with coconut mixture and again shape it completely covering the coconut mixture.
5. Steam cook for about 15-20 minutes.
Tips
1. Wet your palms while making the rice balls so as to prevent it from sticking.
2. Moulds for modak is available in the market.
