MEZHUKKUPURATTI (STIR FRIED VEGETABLES)

This is a style of vegetarian preparation in Keala in which the vegetables are stir fried with shallots or onions and spices. Raw banana, yam, beans, ivy guard, cowpea etc can be used in preparing this dish. It is a healthy and traditional Kerala dish which goes well with rice, roti etc. In this recipe I have prepared the mezhukkupuratti with ivy guard.


Ingredients

1. Ivy guard – 250 gm

2. Green chilli chopped – 2

3. Shallots or onion sliced – ½ cup

4. Turmeric powder – ½ tsp

5. Garlic crushed – 1 tsp (optional)

6. Coconut bits – ¼ cup (optional)

7. Curry leaves

8. Chilli flakes – 1 Tbsp

9. Mustard seeds – ½ tsp

10. Oil – 1 Tbsp

11. Salt


Preparation

1. Wash and slice the ivy guard into thin lengthwise slices.

2. Heat oil in a pan. Crackle mustard seeds. Add garlic, curry leaves, green chillies, chilli flakes, coconut bits, turmeric powder and onion/shallots. Saute for a minute and add the sliced ivy guard and salt. Mix and cook on low flame for 5 minutes. Open the lid and stir fry for 2 minutes. Remove from flame.


Tips

1. Use of coconut oil and coconut bits gives authentic taste of Kerala.
