MEXICAN RICE

An easy one pot vegan rice dish also known as Spanish rice which is full of flavours. It is a simple combination of onion, vegetables, spices and rice. It also goes well with tacos.


Ingredients

1. Basmati rice - 2 cups

2. Olive oil – 2 Tbsp

3. Tomato paste – 2 Tbsp

4. Tomato chopped – 1

5. Onions chopped – 1

6. Garlic chopped – 1 Tbsp

7. Capsicum chopped – ¼ cup of each colours

8. Corn – ½ cup

9. Carrots cubed – ¼ cups

10. Green peas – ¼ cup

11. Cumin powder – 1 tsp

12. Lemon – 1

13. Coriander leaves chopped – 2 Tbsp

14. Black pepper powder – 1 tsp

15. Chilli flakes – 2 tsp

16. Oregano – 1 tsp

17. Tomato sauce – ½ cup

18. Salt


Preparation

1. Wash and soak rice for 30 minutes. Drain and keep aside.

2. Heat oil in a pan. Add garlic and sauté for few seconds. Add onion and capsicum and sauté till onions are soft.

3. Add all chopped vegetables. Mix well.

4. Add the soaked and drained rice and tomato paste. Stir until grains are toasted (for about 4-5 minutes).

5. Add chilli flakes, cumin powder, oregano, salt and pepper.

6. Add tomato sauce, lemon juice and 3 cups of water. Let it boil for 2 minutes on medium flame.

7. Cover and cook for 10-15 minutes, stirring in between.

8. Remove from flame and keep it covered for another 10 minutes.

9. Add coriander leaves. Mix gently and serve hot.


Tips

1. Rice should not be over cooked.
