This soup is light and healthy and a wholesome one pot meal.
Ingredients
1. Onion chopped – 1
2. Celery – 2 stems
3. Sliced carrots – 2
4. Minced garlic – 3
5. Oregano – 2 tsp
6. Turmeric powder – ½ tsp
7. Chilli flakes – ½ tsp
8. Chicken pieces – 250 gm
9. Orzo pasta – ¾ cup
10. Green peas – 1 cup
11. Lemon zest – 1 tsp
12. Lemon juice – 2 lemons
13. Spring onion greens – 2
14. Chopped parsley – ½ cup
15. Olive oil – 2 Tbsp
Preparation
1. Heat olive oil in a pan and add chopped onion, carrots and celery. Sauté until softened.
2. Add garlic and sauté for another minute.
3. Add salt and pepper. Mix well. Add chicken pieces.
4. Add oregano, turmeric and chilli flakes
5. Add 6 cups of water. Let it boil and reduce to medium flame.
6. Cook for 10-15 minutes until the chicken is fully cooked.
7. Remove the chicken pieces on to a plate and keep aside.
8. Add orzo pasta and green peas to the pan. Let it boil on high flame and then lower flame to medium and cook for 10 minutes or until orzo pasta is cooked. Stir in between.(Add boiled water if required)
9. Shread the chicken and add to the pan.
10. Cook for 5-6 minutes.
11. Add lemon juice and lemon zest, chopped green onion and parsley.
12. Serve hot.
Tips
1. Adjust lemon juice as per your taste.
