MEAT STEW

Meat stew is a comfort food in which vegetables and meat are infused with great flavours as they are slow cooked. It is one of the most popular and traditional dish served in many of the Kerala homes. It is served with Appams, chappathis etc.


Ingredients

1. Meat (curry cut) – 1 kg

2. Black pepper – 2 Tbsp

3. Carrots cubed – 2

4. Potatoes cubed – 2

5. Tomato – 1

6. Cinnamon – 2 inch piece

7. Cardamom – 8

8. Cloves – 8

9. Onion sliced – 2

10. Ginger garlic crushed – 2 Tbsp

11. Green chillies – 6

12. Thin coconut milk – 3 cup

13. Thick coconut milk – 2 cup

14. Coconut oil – 2 Tbsp

15. Salt

16. For tempering – Ghee- 3 Tbsp, shallots sliced – 5-6, curry leaves, cashew nuts – 10, raisins – 10


Preparation

1. In a pressure cooker heat coconut oil, add the whole spices. Sauté and add onions and green chillies. Stir for one minute.

2. Add ginger garlic and sauté for few seconds.

3. Add meat pieces and mix well. Sauté on medium flame till colour of meat changes.

4. Add thin coconut milk (it should cover the meat). Add salt and mix well. Cook covered on medium flame for 15-20 minutes (4-5 whistles).

5. When the pressure goes on its own add carrots and potatoes and cook covered on medium flame for another 10 minutes (1-2 whistles).

6. Remove from flame and when the pressure goes on its own add thick coconut milk, tomato pieces and mix well.

7. Heat again and remove from flame when it starts boiling.

8. Heat ghee in a pan and add shallots and curry leaves. Sauté till brown adding cashew nuts and raisins. Mix with the meat curry and keep it covered for some time before serving.


Tips

1. 1 tsp of garam masala also can be added but it changes the colour of stew.

2. Coconut oil is used for authentic traditional flavour. Otherwise any oil/ghee can be used.
