MANGO PUDDING

This is an easy pudding with a smooth and soft velvety texture with flavour of the king of fruits.


Ingredients

1. Sweet mangoes – 2 (medium size)

2. Milk – 500 ml

3. Sugar – ½ cup

4. Corn flour – ¼ cup

5. Milk powder – ¼ cup

6. Lime juice – 1 Tbsp

7. Mango essence – 1 tsp (optional)

8. Salt – 2 pinches


Preparation

1. Take out the mango pulp and keep aside.

2. In a mixer grinder add mango pulp, sugar and a pinch of salt and puree it.

3. Add milk, corn flour and milk powder and blend well.

4. Transfer to a pan and cook on medium flame, stirring continuously. When it starts boiling lower the flame and cook for 4-5 minutes or till it thickens, stirring continuously. Remove from flame.

5. Add lime juice and mix well.

6. Add essence if using and mix well.

7. Transfer to a serving bowl and refrigerate for 2-3 hours.

8. Serve garnished with chopped mangoes.


Tips

1. Sugar can be replaced by condensed milk.

2. Digestive biscuits and chopped mangoes can be layered in between and at the bottom.
