MANGO CAKE

Mangoes add a beautiful colour and flavour to the cake. This soft and fluffy cake is easy to make and mostly served as tea cake.


Ingredients

1. Maida – 1 cup

2. Baking powder – 1 tsp

3. Corn flour – 4 Tbsp

4. Salt

5. Mango pulp – ½ cup

6. Sugar – ¾ cup

7. Eggs – 3

8. Mango essence – 1 tsp

9. Vanilla essence – ½ tsp

10. Oil – ¼ cup

11. Lemon juice – 1 tsp

12. Vinegar – ½ tsp


Preparation

1. Sieve maida, baking powder, corn flour and salt 2-3 times to mix well. Keep aside.

2. Heat a pan and cook the mango pulp with lemon juice and 2 Tbsp sugar for 3-4 minutes till it becomes thick. Keep aside.

3. Beat the eggs with remaining sugar to a creamy consistency. Add oil and essences and mix well.

4. Add the cooled mango pulp and mix well.

5. Fold in the maida mixture gently. Add vinegar and mix gently. Immediately transfer greased baking tray.

6. Bake at 180 degrees in a preheated oven for 30-40 minutes or till done.


Tips

1. Few drops of yellow food colour can also be added.

2. Adjust sugar quantity depending upon the sweetness of mango.

3. Butter can be substituted for oil.

4. Roasted and chopped cashew nuts can also be added.
