Liver roast is a spicy and tasty snack or side dish for meals.
Ingredients
1. Mutton liver – ½ kg
2. Salt
3. Turmeric powder – ½ tsp
4. Chili powder – 3 tsp
5. Ginger garlic paste – 2 tsp
6. Oil – 2 Tbsp
7. Fennel seeds (saunf) powder – 1 tsp
8. Meat masala or garam masala – 2 tsp
9. Pepper – 1 Tbsp
10. Onions chopped – 2 big
11. Shallots sliced – ½ cup
12. Curry leaves
13. Green chillies chopped – 1 -2
Preparation
1. Cut liver into small pieces and add 1 tsp of turmeric powder and 1 Tbsp of vinegar and soak it for at least one hour. Clean and wash well and drain it.
2. Marinate liver pieces with salt, turmeric powder, ginger garlic paste, meat masala, fennel seeds powder, curry leaves for 30 minutes.
3. Pressure cook with ½ cup of water on medium flame for 4-5 whistles.
4. Cool and open the cooker and cook open on high flame until semi dry.
5. Heat oil in a pan. Add onions and shallots, sauté for 2 minutes and add the curry leaves and green chillies. Sauté until onions are golden brown.
6. Add the cooked liver and pepper powder. Mix well. Adjust the salt. Stir fry on low flame till dry. Serve hot.
Tips
1. If you over cook liver it tends to become hard.
