LIVER FRY

This is a delicious, quick and easy recipe made in Kerala style. This is fried with few ingredients and goes well with rice or roti or as a starter.


Ingredients


1. Liver – 500 gm

2. Coconut oil – 2-3 Tbsp

3. Green chillies – 4 chopped

4. Ginger crushed – 1 Tbsp

5. Curry leaves

6. Crushed Pepper – 1 Tbsp

7. Coriander powder – 1 Tbsp

8. Fennel seed (saunf) powder – ½ Tbsp

9. Salt



For the paste

1. Coriander powder – 2 Tbsp

2. Pepper crushed – 1 Tbsp

3. Coconut oil – 1 tsp


Preparation

1. Cut the liver into medium size pieces and wash and strain. Keep aside.

2. Heat 2-3 Tbsp of oil in a pan and add chopped green chillies, crushed ginger, curry leaves, pepper and coriander powder one after the other, stirring in between. Saute for a minute and add the liver pieces.

3. Mix and sauté for 10 minutes on low flame.

4. Add ¼ th cup of water and cook on low flame for 10-15 minutes, stirring in between.

5. Make a paste of coriander powder, pepper and coconut oil with little water and add to the pan. Mix well and add fennel seed powder and salt and cook covered on low flame for 15-20 minutes. Stir in between and add curry leaves. Mix well and remove from flame.


Tips

1. Adjust the spices as per your preference.
