Lemon rice is one of the most popular rice recipes from South India. It is a delicious and flavourful dish which is easy to make and also makes an easy lunch box option.
Ingredients
1. Cooked rice – 2 cups
2. Oil – 1 tsp
3. Mustard seeds – ½ tsp
4. Peanuts – 1 Tbsp
5. Ginger grated – 1tsp
6. Green chillies chopped – 2
7. Lemon juice – 1 Tbsp
8. Urad dal (Black gram) – 1 tsp
9. Chana dal (Bengal gram ) – 1 tsp
10. Asafetida – 1 pinch
11. Dry red chillies – 1
12. Salt
13. Curry leaves
14. Turmeric powder – ¼ tsp
Preparation
1. Mix the cooked rice with lemon juice and salt. Keep aside.
2. Heat oil in a pan. Add peanuts and fry until golden and remove from fire. Keep aside.
3. In the same pan add mustard seeds, urad dal and chana dal. Stir fry on medium flame until golden.
4. Add dry red chilli, asafetida, green chillies, grated ginger and curry leaves. Fry on medium flame for 30 seconds. Add turmeric powder and mix well. Remove from flame.
5. Add the cooked rice and fried peanuts and mix gently.
6. Serve with papad and pickle.
Tips
1. Rice should not be over cooked.
2. Use of cooled rice is preferred.
3. Roasted cashew nuts can also be added.
4. Use of sesame oil gives an authentic taste.
5. Coriander leaves can be used for garnishing.
6. 1 tsp ghee can be sprinkled on the cooked rice for better flavour.
