Kulkuls are little deep fried sweet curls. It is a traditional Christmas treat and most popular in Goan region. It may have come from Portuguese community.
Ingredients
1. Maida – 1 cup
2. Fine semolina (sooji) – ½ cup
3. Melted ghee – ¼ cup
4. Sugar powder – ½ cup
5. Vanilla essence – 1 tsp
6. Coconut milk – 4-5 Tbsp
7. Salt
Preparation
1. Mix semolina (sooji) with melted ghee and keep aside for 10-15 minutes.
2. Add maida to semolina mixture and mix well till you get a bread crumbs texture.
3. Add sugar powder, salt and vanilla essence and mix well.
4. Add coconut milk, little by little, and knead to soft dough.
5. Make small balls out of the dough and press it on a fork or a new comb and curl it.
6. Heat oil and add the kulkuls and fry on medium flame until they are golden brown and crisp.
7. Remove from oil and dust some sugar powder (optional)
Tips
1. Cardamom powder can be added in place of vanilla essence.
2. Coconut milk can be replaced with milk.
3. Wheat flour (atta) can also be used in place of maida.
