The word ‘kootu’ means mix or combination. Kootu curry is a thick curry based dish which is prepared with yam, ash guard, raw bananas and black chickpeas. This is best served with rice. It is a ‘must’ dish for all sadyas or feasts.
Ingredients
1. Yam cubed – 2 cups
2. Raw banana cubed – 1 cups
3. Ash guard cubed – 1 cup
4. Black chickpeas – 1 cup
5. Turmeric powder – 1 tsp
6. Pepper powder – 1 tsp
7. Chilli powder – 1 Tbsp
8. Jaggery powder – 2 Tbsp
9. Coconut grated – ½ cup
10. Cumin seeds – 1 tsp
For Tempering
1. Oil – 2 Tbsp
2. Curry leaves –
3. Coconut grated – 1 cup
4. Red chilli – 2-3
Preparation
1. Soak the chickpeas for 7-8 hours. Cook the chickpeas along with ½ tsp of turmeric powder and keep aside.
2. Cook the yam, ash guard and banana with 1 Tbsp chilli powder, turmeric powder, salt and pepper. When it is almost done add the cooked chickpeas. Mix well.
3. Make a coarse paste of ½ cup coconut and cumin seeds and add to the cooked vegetables.
4. Mix salt and cook on medium flame for 2 minutes. Add jaggery and mix well. Cook for 1 minute and remove from fire.
5. Heat oil in a pan. Add curry leaves, red chillies and I cup of grated coconut. Saute till the coconut becomes golden. Mix in the cooked vegetables.
Tips
1. Chana dal can also be used in place of chickpeas.
