This is a simple and easy cake usually prepared during Christmas. In this cake the dry fruits are not soaked in alcohol in advance.
Ingredients
1. Dry fruits chopped – 1½ cup (cranberries, raisins, dry dates, plum,etc.)
2. Almonds, walnuts, cashew nuts chopped – ¾ cup
3. Orange rind – rind of 1 orange
4. Lemon rind – rind of 1 lemon
5. Butter – ½ cup (110 gm)
6. Eggs – 2
7. Vanilla essence – 1 Tbsp
8. Rum – ¾ cup
9. Sugar powder (for caramel) – 1 cup
10. Boiled water – 1 cup
11. Spices (star anise – 2 small, cinnamon – 2 inch piece, cardamom – 10, cloves – 3, nutmeg – ½ )
12. Maida – 1¾ cup
13. Baking powder – 1 tsp
14. Baking soda – ¼ tsp
Preparation
1. Preheat oven to 170 degree Celsius.
2. Powder the spices with 1 Tbsp sugar to a fine powder. Keep aside.
3. Sift maida with baking powder and baking soda and keep aside.
4. Heat the sugar powder in a pan. When it changes to golden colour lower the heat and add boiled water, little by little, and mix well. Let it boil till it melts well, stirring continuously.
5. Add rum, butter and mix well.
6. Add dry fruits. Mix well and let it boil on medium heat for 2-3 minutes.
7. Cool and add the chopped nuts and spice powder.
8. Add the maida mix and mix softly.
9. Beat eggs with vanilla essence and add to maida mix. Mix well.
10. Transfer to a baking dish lined with butter paper and bake at 170 degrees Celsius for one hour or till done.
11. Cool and cover it and ideally store for few days before cutting.
Tips
1. If the butter is not salted then add ½ tsp of salt while sifting maida.
2. All ingredients should be at room temperature.
3. 2 Tbsp rum can be sprinkled or brushed on top of the cake after the cake is cooled, as per your preference.
