HUMMUS

Hummus is a Middle Eastern dip or spread. It is a healthy delicious creamy and smooth paste made from chickpeas, tahini, lemon and spices. It is a good source of plant based protein.

Ingredients

1. Cooked chickpeas – 2cups

2. Garlic – 1 Tbsp

3. Tahini paste – ¼ cup (Preparation given below)

4. Salt

5. Lemon juice of 1 lemon

6. Olive oil – 4 Tbsp

7. Ice cubes – 3-4

8. Cumin powder – ½ tsp

9. Paprika – 1 tsp (optional)


Preparation of Tahini paste

1. Dry roast 8 Tbsp of sesame seeds on low flame till it turns slightly brown. Cool it.

2. Grind in a chutney jar to a fine paste.

3. Add 4 Tbsp of olive oil and grind to a smooth paste. Keep aside.


Preparation of Hummus

1. Cook garlic in olive oil in low flame till it turns brown. Keep aside.

2. Remove the skin of boiled chickpeas.

3. Puree the chickpeas and garlic to a smooth paste adding ice cubes.

4. Add tahini paste, roasted garlic along with olive oil and rest of the ingredients.

5. Blend to a fine paste (add hot water if required) and transfer to a serving bowl.

6. Garnish with olive oil, chopped parsley and paprika.


Tips

1. Use of tahini, lemon juice and salt can be varied to cater to your taste.
