HOME MADE TREACLE (DARK CARAMEL)

Dark treacle is used in cakes, cookies, etc. This recipe is easy and quick to prepare. It is strong, slightly bitter in flavour and richer in colour. It is a common sweetener and condiment in British cookery.


Ingredients

1. Sugar – 3 cups

2. Water – ¼ cup

3. Boiling water – 1½ cup

4. Lemon juice – 1 Tbsp


Preparation

1. Heat 1 cup sugar and ¼ cup water in a heavy bottom pan. Let the sugar melt and change to a dark colour. Don’t stir but just swirl the pan.

2. As the fumes start coming reduce the flame to low and stir well.

3. Add 1½ cup boiling water, little by little, stirring continuously. Let it boil for 5 minutes.

4. Add 2 cups of sugar and mix well. Add 1 Tbsp of lemon juice. Stir continuously till sugar melts.

5. Boil for 5 minute on high flame.

6. Remove from heat and let it cool.

7. Store in air tight container. It can be stored outside for 5-6 months.


Tips

1. Adding lemon juice will prevent the sugar from getting crystalised.

2. If the syrup is too thick than required then add more boiling water and simmer for few minutes.

3. Store in normal cupboard and not in fridge.
