This is a no-cook recipe that tastes fresh and ideal for summers.
Ingredients
1. Cornflakes or jowar flakes or poha – 1 cup
2. Chopped cumber – 1 cup
3. Lemon juice – 1 Tbsp
4. Coriander leaves – 4 Tbsp
5. Salt
6. Grated coconut – ¼ cup
Preparation
1. In a bowl mix cucumber with ½ Tbsp lemon juice, 2 Tbsp coriander leaves, grated coconut and salt. Keep aside.
2. In another bowl layer half of the cucumber mix, then the flakes and rest of the cucumber mix and sprinkle grated coconut on top.
3. Cover tightly, pressing it down and keep aside for 30 minutes. The flakes will soak up the water from the cucumber mix and fluff up.
4. In a pan heat 1 Tbsp of oil. Add ¼ tsp mustard seeds, 2 Tbsp peanuts, 1 red chilli and few curry leaves and pour over mixture.
5. Mix well and serve fresh.
Tips
1. Do not grate the cucumber. It should be chopped.
