GREEN PULAO

This is a delicious and healthy one pot spicy rice dish made with spinach and other vegetables, spices and herbs. It is a flavourful dish which serves as a quick complete meal. The green paste adds up extra aroma to the pulao.


Ingredients


1. Basmati / Sona masuri rice – 2 cups

2. Spinach (paalak) chopped – 2 cups (15-20 leaves)

3. Mint (pudina) – ½ cup

4. Coriander leaves chopped – ¼ cup

5. Green chillies – 4

6. Oil – 2 Tbsp

7. Ghee – 1 Tbsp

8. Cumin seeds (jeera) – 1 tsp

9. Bay leaves – 3-4

10. Crushed garlic – 10-15 cloves

11. Onions cubed – ½ cup

12. Green peas – ½ cup

13. Sweet corn – ½ cup

14. Lemon juice – 1 Tbsp

15. Salt


Preparation

1. Wash and soak the rice for 30 minutes. Keep aside.

2. Make a paste of spinach, mint, coriander leaves, green chillies and 1 Tbsp of oil and keep aside.

3. Heat 1 Tbsp oil and 1 Tbsp ghee in a pan and crackle cumin seeds and add bay leaves. Saute and add garlic. Saute till it is light brown.

4. Add onions. Saute and add capsicum. Saute for a minute and add the green paste. Mix well and stir continuously on medium flame for 2-3 minutes.

5. Add carrots, green peas and sweet corn. Mix well and add 3½ cups of water and salt. Let it boil and add the soaked and strained rice and lemon juice.

6. Mix well and cook covered on low flame till cooked, stirring in between.

7. Remove from fire and serve hot with raita, pickle and pappad.


Tips

1. It can also be cooked in pressure cooker. Cook for 2 whistles on medium flame.
