GOAN SAUSAGE PULAO

Goan sausage pulao is a popular dish in Goa. It is a flavourful, delicious and quick one pot meal and is traditionally made with choris (pork sausage). In this recipe I have used chicken sausage. This dish has now become popular outside Goa too. It is a meal by itself served with salad and pickles.


Ingredients

1. Basmati rice– 1 cup

2. Sausages – 3-4

3. Oil – 2 Tbsp

4. Onions sliced – 1 cup

5. Garlic crushed – 3 tsp

6. Tomato sliced – 1 cup

7. Green chilli – 3-4

8. Coriander leaves – ¼ cup

9. Lemon juice – 3 tsp

10. Salt

11. Turmeric powder – 1 tsp

12. Chilli powder – 1 tsp

13. Sugar – a pinch

14. Garam masala powder – 1 tsp

15. Spices – pepper – 1 Tbsp, bay leaf – 2, cloves – 4-5, cinnamon – 1 inch piece, cardamom – 2-3



Preparation

1. Cut sausages into small pieces and mix with 1 tsp lemon juice, ½ tsp turmeric powder and salt and marinate for 1 hour.

2. Wash and soak the rice for 30 minutes. Drain and keep aside.

3. Heat 1 Tbsp oil in a pan. Add 1 tsp crushed garlic, 1 tsp chilli powder and mix well. Add the marinated sausage pieces. Sauté lightly on medium flame till it is light golden and remove from pan and keep aside.

4. Add 1 Tbsp oil to the same pan. Add the spices (crushed or whole). Sauté on medium flame for few seconds and add green chillies and left over garlic. Cook for minute and add the sliced onions. Stir fry for 2 minutes till it is light golden.

5. Add the sliced tomato and turmeric powder. Mix well and sauté for a minute. Add sugar and salt and the drained rice and mix well.

6. Add 2 cups of hot water to rice mixture. Add lemon juice and cook covered on low flame for 8-10 minutes.

7. Add the fried sausages and coriander leaves. Mix 1 tsp of garam masala powder. Cook for 3-4 minutes and remove from flame.

8. Serve hot with salad, raita and pickles.
