This is a light flavourful refreshing drink which is a perfect beverage to be served during the festive season especially during Christmas. This wine is best enjoyed in winter season as ginger is warm in nature. The taste of the wine is mildly spicy, sweet and sour.
Ingredients
1. Ginger (crushed or grated) – 250 gm
2. Sugar – 300 - 400 gm
3. Water – 3 litre
4. Cloves – 12
5. Nutmeg (crushed) – 1
6. Red chillies with stalk - 12
7. Citric acid – 1½ tsp
8. Caramel (for colour ) – ¼ cup (Preparation of caramel mentioned in recipe for fruit cake in the blog)
Preparation
1. Tie the cloves, nutmeg and red chillies in a clean dry muslin cloth and keep aside.
2. Boil the water and add the crushed ginger, sugar and the herbs tied in the cloth. Boil for 20 minutes on medium flame. Switch off the flame and keep it for 12 hours.
3. Thereafter strain it. Add citric acid and caramel. Mix well and transfer into dry glass bottles and keep aside for 24 hours before serving.
Tips
1. This wine can be stored in room temperature for 2-3 weeks and thereafter under refrigeration.
2. 60 ml of rum or brandy can be added to the wine depending on your preference.
3. Vary the quantity of sugar as per your preference for the wine.
